TOURTIÈRE 
It is a pie made of various meats and spices. Traditional, yes, but there are as many recipes as there are regions and cooks. Each cook seems to have it’s own secret recipe. Even age matters, for if one is twenty, forty or sixty, one’s mother’s recipe may vary greatly. It may also vary within the same region, from village to village, even from steeple to steeple. Although this dish was usually associated with the Christmas holidays, it is now being served year round, specially among French Canadians. Our tourtière is made of porc, beef and my grandma’s secret spice mixture.
